GUACAMOLE

2 ripe avocados, peeled and pitted
2 tomatoes, peeled, seeded and finely chopped
6 scallions, finely chopped
1-2 fresh chiles, seeded and finely chopped
2 tbs. fresh lime or lemon juice
1 tbs. chopped cilantro
Sea salt and freshly ground black pepper
Cilantro sprigs, to garnish

1. Put the avocado halves in a large bowl and mash them roughly
   with a large fork.

2. Add the remaining ingredients. Mix well and season with salt
   and pepper. Serve garnished with cilantro sprigs.
